Tortilla Beef Bake

I'm always looking for a quick & easy meal.

Here's the recipe for the Tortilla Beef Bake

1-1/2 lb ground beef
1 can cream of chicken soup
2-1/2 cups tortilla chips
16 oz Salsa
2 cups Colby Jack shredded cheese
2 tsp Cumin

Brown ground beef and drain. Stir in soup and salsa.
Spray baking dish with Pam.
Crumble chips and sprinkle enough to cover bottom of baking dish.
Top with beef mixture and cheese.
Bake at 350 for 25/30 minutes.
Sprinkle chips on top before serving.

Optional: Serve with tomatoes, lettuce and sour cream

I like tweaking recipes so the next time I make it .....I'm going to experiment. I'm going to line the baking dish with flour or corn tortillas instead of chips and drop the cheese down to a cup.
And I may try 3/4 pound of ground turkey and 3/4 pound of ground beef (instead of 1-1/2 pounds of ground beef).

I love EQP (easy, quick and painless) recipes. My easiest EQP is 1 packet of white chicken chili mix added to 1 undrained large can of white meat chicken with two cans of white beans (navy, cannelini, whatever), heated to bubbling. Served over Fritos with sour cream and shredded cheese garnish. Cupboard to table, 10 minutes.
